Two Delicious Ring-cake Recipes

This two ring-cake recipes will sort out the “what should I heve for breakfast” problem for some time.

Rum-flavoured Ring cake

Ingredients for six people :
350gr (12½ oz) flour, sifted
350gr (12½ oz) butter, softened
350gr (12½ oz) sugar
150gr (5¼ oz) banana
125gr (4½ oz) walnuts, ground
80ml (2¾ oz) rum
4 eggs
1 tsp baking powder, sifted
1 pinch of salt
Juice of one lemon

Directions:

In a bowl pour the butter, the sugar and a pinch of salt and blend everything together with an electric mix. Then, add three of the four eggs, one at the time and keep on mixing.
In the meantime, add the baking powder, half of the flour and the remaining egg to the mix, s ir until blended, then add the remaining flour. Mash the banana with the lemon juice and pour it in the mix with the rum.
Preheat the oven at 180ºC (356ºF). Grease a ring shaped cake tin with butter and dust with sugar. Pour the mix in it and bake for one hour – one hour and fifteen minutes.

Milk-free ring-cake

This one is perfect for those who have intolerances to lactose. You’ll be amazed of how soft it will be even without milk

Ingredients:
250gr (9 oz) all-purpose flour
250gr (9 oz) sugar
3 eggs
130ml (4 fl oz) water
130 (4 fl oz) extra virgin olive oil
1 tsp baking powder
1 pinch of salt
3 tbsp chocolate chips

Directions:

Put the eggs with the sugar in a food mixer and blend until you get a smooth cream. Add then the olive oil, water, rum, flour one tablespoon at the time, and finally the baking powder and the chocolate chips.

Preheat the oven at 180ºC (356ºF). Grease a ring-shaped cake with butter and dust it with flour, and pour three quarters of the mix. Add a tablespoon of cocoa powder to the remaining cream, give a quick stir and pour it in the cake tin and bake for 40 minutes.
